Egg and potato curry. The addition of potatoes is only a suggestion from Madhur but I thought it would bulk up the curry. Also I added a small onion and increased the quantity of chilli powder to beef up the heat. And whereas Madhur uses hard boiled eggs I went half way with semi-soft eggs.

Served with a roti paratha.

The ingredients in mine are virtually the same although the quantities vary and I add a little curry powder.
  • 750 gm Potatoes
  • 4 tblsp Vegetable oil
  • 1 Medium size onion, finely chopped
  • 175 gm Peas, shelled
  • 1 tblsp Ginger, finely grated or pureed
  • 3 Fresh red chilies, finely chopped
  • 3 tblsp Coriander leaves, finely chopped
  • 1 1/2 tsp Salt
  • 1 tsp Ground coriander seeds
  • 1 tsp Garam masala
  • 1 tsp Ground roasted cumin seeds
  • 1/2 tsp Chili powder
  • 2 tblsp Lemon juice
 
Chili on white rice.

Had some spaghetti sauce & ground beef in the freezer, so I just turned it into chili by adding cheese, chili powder & cumin!! :wink:
