What is your favorite herb or spice?

I was thinking about this the other day ad I tried to sort out my spice collection. I use every week:
Turmeric
Corrander powder (seeds less often)
Cumin seeds and powder
Chilli powder
Fennel seeds.

I would say the most used is chilli powder, then cumin.
 
These will be added to my Balti potatoes later.......

Curry leaves;
Chilli powder;
Cumin seeds;
Fennel seeds;
Fenugreek seeds;
Nigella seeds;
Mustard seeds.

One of the very few dishes that I cook when none of the seeds are ground prior to adding to the pan.

To that mixture will be added chopped fresh chillis, garlic, ginger, onions and, of course, sliced potatoes.
 
If I'm eating an Indian dish with rice I virtually always cook the local Jasmin rice with turmeric, cardamom, cinnamon, cloves and bay. Basmati is not readily available in this part of Thailand.

We just have plain rice here, that's changing.......real soon.
