I've seen loads of recipes for whole roast cauliflower but not tried making one. The result was a really tasty dish. The cauliflower is so tasty as it is not drowned in water and the spices are not overpowering. We had it with some curry one day then leftovers to accompany a roast which added a nice hint of spice.

1 whole cauliflower
2 teaspoons garlic paste
2 teaspoons ginger paste
1 teaspoon cumin seeds
1/2 teaspoon cumin powder
1/2 teaspoon chili powder
1/2 teaspoon turmeric
salt
olive oil

Mix all the spices and add a little olive oil to make a thin paste.
Pour over the cauliflower.
Roast covered for about 50 mins (uncover for last ten minutes to brown top)

I've noticed that roasted cauliflower is popular and not yet tried it. I hadn't appreciated it would take 50 mins to cook! It sounds delicious.

I did a whole roast cauliflower that had a dressing of lemon, garlic, Dijon, capers, parsley & olive oil.

It was great but we love the crispy brown bits of roasted cauliflower so I cut it into florets, roast it with oil + S&P then dress it. Delicious.
