soba/buckwheat pasta

Soba noodles or buckwheat pasta, may be made entirely of buckwheat flour or a combination of buckwheat and refined wheat flour.
The most authentic kind of soba noodles, called juwari soba, are noodles made with only buckwheat flour and water.
Noodles made with 80% buckwheat and 20% wheat flour are sometimes called hachiwari.
