Caribbean cuisine is a fusion of West African, Creole, Amerindian, European, Latin American, Indian/South Asian, Middle Eastern, and Chinese. These traditions were brought from many different countries when they came to the Caribbean. In addition, the population has created styles that are unique to the region.
Living in the UK there is no tradition of frying chicken. However I keep seeing it done on episodes of Diners, Drive-Ins and Dives that are shown constantly on one of our food channels, and they mostly look rather tasty.
So does anyone have their own method for fried chicken? Clearly there are...
This is another interesting way in which rice can be prepared. This recipe was taken from "Caribbean Cookbook." I figured it would be a good recipe to enter in the Cooking Bites Recipe Challenge.
