I apologize for the lack of photos of this dish… I plumb forgot to take any. I brought it to a friend at her hip re-hab facility. I intended to make this for Christmas Day lunch (especially as she describes it the food they serve there hardly deserves the word “food” or even “sustenance”...
I had duck breast at a restaurant for a birthday celebration, and I was amazed by the flavor and texture: it wasn't just an expensive chicken breast. Instead, it was more like steak, but better, with a richness that I haven't had before. I decided to us a cast iron pan, because I like the...
Scotch eggs are seasoned ground meat of your choice wrapped around a peeled boiled egg, which can be semi-soft or hard cooked prior to the wrapping. Then, they’re typically rolled in breading, usually breadcrumbs. I went for coconut flakes instead. And, I used a large duck egg, which will...
I've enjoyed duck since I tried it and every time I have it again it never disappoints. I made this dish the other day and I enjoyed it and so did my girlfriend. I brined the duck breast for 1 hour, then placed it in the sous vide for 1 hour at 135 F. I marinated the carrots and then sous vide...
In the U.S. wild duck can not be sold. You either hunt for yourself or have a friend kind enough to gift you with the bounty of their hunt.
This recipe is not applicable to domestic duck.
Wild duck needs to be treated like beef - cooked rare/medium rare. If wild duck is over cooked the meat is...
Hi, guys. I'm looking for ideas. This weekend, I'll be making duck ramen. Now, in order to make duck ramen, you need a duck carcass. And in order to get a duck carcass, you first need a duck (I worked that out). Now, most people would roast the duck, and serve it to their family. But as a single...
Wild pigs are so common and destructive here they a nearly classed as vermin. I put some garlic, seasoning, duck legs and cubed boar shoulder in the slow cooker(no liquid ). Take the bones out of the duck then shred with forks. The legs produce enough fat to get a good set rillette.
First ever trying these, Yorky got me wanting to try these. His bright yolks looked so tempting. Daughter was given two to try, she gave them to me to cook. White cheese toast bread and two poached eggs. S and p added after I took the pic. Not much white around the yolk which surprised me...
I am reluctant to post this recipe as I managed to mess it up. But I made this for The Cookbook Game #3 so the rules state I must post the recipe. It is a good recipe if you are confident and experienced enough to do it! But I'd recommend practising making roulades first with less expensive...
2 duck breasts, skin removed and minced coarsely
1 tbsp dried breadcrumbs (I used packet Panko)
1/2 tsp salt (smoked, if you have it)
1/2 tsp Chinese five spice
1/2 tsp coarsely ground black pepper.
50g blue cheese (I used Stilton)
Combine all of the ingredients apart from...
I used just two duck legs here but to be honest you could use four as there is more than enough sauce produced by the vegetables and fruit. If you use four duck legs then double up on the marinade ingredients.
Serve this with new potatoes or mashed potatoes to mop up the sauce.
How often do you eat duck? I must admit that I don't very often but I do a good duck leg confit. @creative mentioned cooking duck breasts in another thread which prompted me to post this. I'd love to know how you cook duck and any recipes you have - with apologies to @Duck59! :D
We have bought a duck for Christmas dinner. Its just for the two of us. I cooked duck before but with mixed results so any advice is welcome. I was thinking that cooking it slow is better. Also, I want to add fruit of some sort. The duck is from M&S and is not very big. I was thinking maybe...
A friend gave me the basic idea for this earlier in the week. I had the prawns so...
4 Duck eggs
2 tblsp mayonnaise
½ tsp tomato puree
Pinch of salt
Pinch of black pepper
4 dashes of Tabasco (or to taste)
8 Large prawns
Place the eggs in a saucepan and...
