Muffins are easy to make because unusually in the baking world they demand a lumpy batter. So no creaming sugar and fat or beating. Everything is tipped into a bowl and loosely mixed. This recipe uses a whole lemon (minus pips) for a super zingy taste.

I've taken the recipes of a several different sites and modified them to the taste of this household and then made it dairy free. I haven't got all of the ingredients or the time to make it and taste test it (so the soya milk was a straight substitution for full cream milk and the coconut cream...
A simple as can be, these roast potatoes taste delightfully of lemon. They make a good accompaniment to fish.
Ingredients (serves 2-3 as a side)
300g new potatoes (cut into halves or quarters depending on size)
Zest of one lemon
Juice of one lemon
5 or 6 thyme sprigs
