Meringue (, mə-RANG; French pronunciation: [məʁɛ̃ɡ]) is a type of dessert or candy, often associated with Italian, Swiss, and French cuisine, traditionally made from whipped egg whites and sugar, and occasionally an acidic ingredient such as lemon, vinegar, or cream of tartar. A binding agent such as salt, corn starch, or gelatin may also be added to the eggs. The key to the formation of a good meringue is the formation of stiff peaks by denaturing the protein ovalbumin (a protein in the egg whites) via mechanical shear. Meringues are often flavoured with vanilla, a small amount of almond, or coconut, although if extracts of these are used and are based on an oil infusion, an excess of fat from the oil may inhibit the egg whites from forming a foam.
They are light, airy and sweet confections. Homemade meringues are often chewy and soft with a crisp exterior, while many commercial meringues are crisp throughout. A uniform crisp texture may be achieved at home by baking at a low temperature (180–200 °F, 82–93 °C) for an extended period of up to two hours.

    Recipe Key Lime Meringue Pie

I did a couple of things differently than a lot of recipes. Craig and I are not fond of graham crackers, so I made a vanilla wafer crust and I added zest to the filling. It really added a zing that cut the sweetness of the meringue. I also have written this recipe up with double the filling...

Recipe Rhubarb and Pomegranate Eton Mess

Classically 'Eton Mess' is made with whipped cream, meringue and strawberries but really, you can use any kind of fruit you like. Tangy rhubarb and pomegranate work beautifully with the sweet caramelised marshmallow meringue and the rosewater adds an exotic, aromatic touch. It is, of course...

    Recipe Dairy free Pavlova

As always I needed a dairy free version of life. This year we decided against having a standard British Christmas cake because it was simply too heavy last year in the exceptionally hot heatwave we had at Christmas. Typically after making that decision, it was some 15C cooler this year...

Well...can you believe that in all my 40 odd years of cooking, I've never made meringue before? I thought it was about time. This is a sort of Pavlova, I suppose. It was actually very easy to make. This method produces a crisp meringue which is gooey on the inside. Photographed today in...

    Lemon and orange meringue pie

We are going over to a friend's house for dinner and I promised to bring dessert. I have a lot of oranges and lemons and I was thinking of making a lemon meringue pie, but to add orange as well. Has anyone done this before? My friend is gluten intolerant and I am planning to make the base with...
