Making tapas doesn't have to mean spending hours in the kitchen. You can rustle up some instant Spanish-style snacks in a matter of moments. These are two of my favourites:
Banderillas
Thread small cornichons, cocktail onions, slices of pepper - or chilli if you're brave - and olives onto cocktail sticks. You can also add rings of carrot if you wish. Sprinkle with a little wine vinegar and serve. They should look something like the illustration.
Olives and cheese
For authenticity, you should use Manchego cheese, but it works well with Cheddar. Just cube some cheese, mix in a small bowl with olives, drizzle with extra virgin olive oil and sprinkle with smoked paprika.
