I think I remember reading a recipe somewhere where they added grated courgette (zucchini) to the meatball mixture and it makes them juicer. Has anyone ever tried this? I'm tempted as I'm using just beef and I can't add any dairy so wondering if it will make them a bit juicier.

You certainly can - but its vital to squeeze as much liquid from the courgettes as possible after they are grated. Otherwise you will end up with very soggy meatballs!

A friend used to add to meatloaf as well, as that was the only way she could get hubs and son to eat veges. She grated and added carrots and yellow squash as well.

We grow these so thanks for the tip, I'm going to try these this summer!
