Following on from a thread about veggie burgers and a request for recipes for them, here are a couple of mine (though admittedly this is more a bean burger than a veg burger!)
Aduki Bean and Rice Burgers
Cooking time 10 mins, Serves 4, not suitable for freezing!
Ingredients
2 tbsp. veg oil
1 onion sliced
1 clove garlic, crushed
1 tsp chilli powder
225g/8oz basmati rice
225/8fl oz veg stock
425g can aduki beans, drained and rinsed
75g/3oz paneer, crumbed/grated
2 tsp garam masala
2tbsp chopped fresh coriander

Ingredients

225/8fl oz veg stock
425g can aduki beans, drained and rinsed

Method
- heat 2 tsp of the oilin a large pan and fry the onions for 2-3 mins stirring occasional until softened. Add the garlic and chilli powder and cook for 1 min.
- Add the rice, stock and beans and bring to the boils, cover and simmer for 10 mins until all of the stock has been adsorbed. Do not lift the lid during cooking. Set aside until cook enough to handle.
- Stir in the paneer, garam masala, coriander and seasoning.
- Divide the mixture into 8 equal parts and form into burgers.
- Heat the remaining oil in a large non-stick frying pan and fry the burgers over a low heat in batches, for 3-4 minutes each side. Serve with steamed green veg.
