Hi all,

I'm planning to make a chilli con carne tomorrow and would be very grateful for any advice on what chilli powder(s) to use in it! I have the following in my cupboard:

habanero, chipotle, naga jalokia
"crushed extra hot red chillies", cayenne pepper
kasmiri, aleppo

then there's sweet paprika, smoked paprika (pimenton) ...

Up until now I've always chucked in some red chilli flakes or cayenne but I'd like to make more of an effort this time. I'd definitely like to use the chipotle but I'm not sure about what else to use and in what proportions. Any advice would be very much appreciated!

Many thanks,
Belinda

OK.
I remembered that I actually took this recipe from the BBC Food website and modified it to make it vegan for me

www.bbcgoodfood.com/recipes/3228/chilli-con-carne

What they fail to include in both the ingredients and the recipe method is the dark chocolate which is shown in the picture

And anytime I use tinned tomatoes I always include both tomatoes puree and a tsp of sugar, so I added extra tomato puree to the recommended 2tbsp. Work it to your taste. Recipes are only guidelines after all.
