I love dukkah but not made it for years, mainly due to the price of nuts. I found almonds in the local supermarket that were a reasonable price so I made almond dukkah based on a taste.com.au recipe.

  • 110g almonds (with shins)
  • 80g white sesame seeds
  • 2 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 2 tsp black peppercorns
  • 1 tbsp dried thyme
  • 1 tsp Maldon sea salt
Toast the almonds in a dry skillet. Add the spices and toast until the smell lovely. Take off the heat and allow to cool.
Blitz but not to a powder
Add salt and thyme

I sometimes take some out of the jar and mix in some fried chillies.
