Recipe Asparagus, Smoked Salmon & Mozzarella on Toast with Capers

Super easy to make. Asparagus is lovely with melted cheese and the capers add a piquancy which lifts the taste of the ordinary.

Ingredients
Slices of bread (sour dough would be good)
Asparagus
Smoked Salmon
Mozzarella slices
Capers
Slices of lime
Balsamic
Poppy seeds & sesame seeds to scatter (optional)

Method
  1. Cook the asparagus to your liking. I microwaved it in a little water for 2 to 3 minutes.
  2. Char the slices of lime with a blow torch and set aside
  3. Lightly toast the bread. Cover with the mozzarella slices and place under a hot grill.
  4. Place on a serving plate. Drape smoked salmon slices over the cheese and top with the asparagus.
  5. Scatter a few capers on and around. Add the slices of lime and drizzle the dish with a little balsamic vinegar.
  6. Sprinkle a poppy seeds and sesame seeds over, if using.
