I had fun getting creative a new recipe today. It turned out good, something different. I had very ripe bananas to use up. I will definitely be making these again. I want to add some walnuts next time.
Banana Oat Chocolate Chips Bars
Ingredients
1/2 cup salted butter softened
3/4 cup brown sugar
1 cup to 1 and 1/4 cup mashed ripe bananas (I used 3 small bananas.)
1/2 tsp vanilla extract
1 and 1/4 cup unbleached flour
1/2 cup raw old fashioned oats
1/2 tsp baking soda 6 to 8 ounces semisweet chocolate chips
Method
Cream butter, sugar, bananas and vanilla. Mix separately flour, oats and baking soda. Combine dry mixture to wet mixture stir until just incorporated. Fold in chocolate. Bake in a buttered or parchment lined13x9x2 casserole pan. Bake 350°F 18 to 20 minutes, until toothpick comes clean.
