Beef Shawarma Recipe

Ingredients
  • 500g beef (round steak or similar fatty beef steak)
  • 3 tbsp yogurt
  • 1/3 cup olive oil
  • 1/3 cup vinegar
  • 1 tsp black pepper
  • 1/2 tsp turmeric
  • 1/2 tsp ground coriander
  • 1 tsp cinnamon powder
  • 1 tsp paprika powder
  • 1 tsp salt, optional - adjust to taste
  • 2 cloves garlic, mashed
  • 1 medium-sized tomato, sliced or diced
  • 2 onions (1 for marinade, 1 for toppings)
  • 1 tbsp sumac
  • 1/4 cup chopped parsley
  • lavash or pita bread
Tahini sauce:
  • 2 cloves garlic
  • 3 tbsp tahini
  • Juice of one lemon
  • 3 tbsp ice water
  • ½ tsp salt
Instructions:
  • Slice the steak thinly against the grain
  • Prepare the marinade by mixing the spices, mashed garlic, oil and vinegar
  • Rub the marinade to the meat, cover and refrigerate at least for 2 hours.
  • Cook the meat in a pan over strong flame until the marinade evaporates
  • Mix crushed garlic, salt, tahini, lemon juice and ice water for the sauce
  • Spread humus to pita bread and layer the shawarma
  • Garnish with tomatoes, onions, parsley and sumak for the toppings

Mate I've scoffed Lamb and Chicken Shawarma in lots of middle east countries. What I liked about your recipe is the authentic way you wrap and seal it seam side down.11/10 I gave you an extra point for the music.

Thanks mate :) In Turkey, it's very common to seal the wrap and give a nice crunch to the lavash bread. I like it that way :)

A super nice recipe & video, thanks. I noticed ground coriander in the video. Could you add it to the recipe list, please.
 
Hungry Man you have done it again! Would it be acceptable to substitute lamb for the beef? That would save me a trip to the butchers.

Of course, never tried it but I don't see any reason why not!
Only thing I would do (totally my personal opinion) is to use a simpler marinade with cumin, black pepper, onions (or just onion juice) and yogurt. If you like the lamb flavor, this way you will not overpower the flavors in the lamb.
