This recipe was "given" to me several decades ago by an old friend (now deceased). It is stunningly simple, and exceptionally delicious and one of the few dishes I miss no longer being able to eat dairy. It is totally adaptable with very few mandatory components and no set quantities.

Ingredients
Red berries, quantity enough for however many servings you need
1 or 2 tubs of mascarpone, quantity depends on fruit
Brown sugar, (we usually use demerara)

Method
  1. Preheat your grill (UK term) on max.
  2. Place the red berries in the bottom of an oven proof dish, along with any juices they may or may not have
  3. Carefully cover the fruit with a complete layer of mascarpone, use a teaspoon to lay a base layer. You don't want the berries staining the cream cheese. Add the remaining mascarpone to build up a layer between ½ and 1 inch (1-2cm) thick.
  4. Sprinkle a good layer of brown sugar over the mascarpone. The thicker the layer of sugar, the more the crunch.
  5. Place the dish under the grill and watch carefully. You may need to turn it once out twice. The aim is to keep the fruit lukewarm, the cheese starting to soften and the sugar browned and crunchy.
  6. Serve immediately.
