Bhatura (Fried Yoghurt Bread)
Makes about 16 bhaturas
Ingredients
250 gms all purpose flour
1tsp salt
2 tsps ghee or melted butter
1 tsp sugar
1 tsp dried yeast or bicarbonate of soda
100 gms full fat natural yoghurt
4 TBSPS warm water (plus a little more if necessary)
Vegetable oil for deep-frying

Method
  • Put all the ingredients in a bowl and mix together with your fingers, until the dough gradually separates from the sides. Add a splash of water if the dough is too dry.
  • Knead the dough until it is very soft and silky.
  • Place the dough in a bowl, cover with a damp cloth, and leave in a warm place for an hour or so.
  • The dough should have doubled in size. Briefly knead the dough, roll into a sausage shape and cut into about 16 pieces.
  • Roll the pieces into a thin,small circular shape and set aside. Do the same with all the pieces.
  • Heat oil in a pan to 375ºF. Slide a piece of dough into the pan; it will sink, then come to the surface. When it comes to the surface, push it down gently with a spatula or slotted spoon. The bread will puff up.
  • Do this a few times, then turn the bread over, fry for about 30 seconds and then drain on absorbent paper/kitchen roll. Do all the dough the same way.
