Recipe Blueberry Chocolate Pancakes

Blueberry Chocolate Pancakes:

Ingredients:

1) Unbleached flour - 3/4 Cup
2) Blueberries - 1/4 to 1/2 Cup
3) Baking powder - 2 tspns.
4) Cocoa powder - 1/4 Cup for pancakes, 1/4 cup for topping
5) Half n half (or milk) - 3/4 Cup
6) Heavy whipping cream - 1/2 Cup
7) Butter - as required
8) Egg - 1
11) Powdered sugar - 2 tblspns.
12) Whipped topping (optional) - as desired


Procedure:

1) Mix Unbleached Flour, 1/4 cup cocoa and baking soda.
2) Mix in half n half or milk with flour and cocoa.
3) Add 1 Egg and mix to consistency.
4) Stir in the blueberries.
5) Set aside.
6) Add heavy whipping Cream, 1/4 cup cocoa and powdered sugar to blender.
7) Whip.
8) Set Aside.
9) In a frying pan, melt butter and slick the pan.
10) Ladle out about 1/4 cup pancake mix into frying pan on medium heat.

NOTE: When the top side begins to bubble, flip the pancake over. Then finish browning the other side.

NOTE: It is recommended to use a measuring cup to ensure that every Pancake is about the same size in diameter.

11) Remove and stack each pancake.
12) Repeat steps 10 and 11 for each pancake.
13) Stack two to three pancakes on a serving plate.
14) Top with whipped chocolate cream.

NOTE: Add whipped topping if desired.

15) Serve.
