Mod.Edit: Copied over from Bourbon Cheesecake thread - this is @detroitdad 's son's recipe.
Ingredients
Crust
12 sleeves of Graham crackers (crushed)
6 tbs butter (melted)
5 tbs sugar
Filling
2lbs cream cheese. If blocks then room temp and softened or simply get whipped easier to mix.
1 cup of sugar
1.5 tsp ginger
1/4th cup bourbon
Lime juice. I used in the ball park of 6-8 tbs.
2 eggs
Topping
16oz sour cream
1/2 cup powdered sugar
Approx. 1 - 2 tbs. Bourbon

Method
- Preheat oven to 350 degrees Fahrenheit
- Toss ingredients together for crust, press into greased spring form pan (I used 10in), then freeze for about 20 minutes, then bake for 15 minutes.
- Toss all ingredients together except for eggs. Mix in eggs slowly. Pour into pan, bake for 40-45 minutes. I think I did 45.
- Toss ingredients together for topping. After cheesecake is baked pour topping on it. Then bake a few more minutes.
- Let cool, and rest over night.
