Recipe & Video Brazilian Beef with Chimichurri

Marinade Ingredients (for 500gm quality steak)
1/2 red onion
10 cloves garlic
2 tsp dried oregano
1/2 cup orange juice
2 tbsp lemon juice
2 tbsp lime juice
1 tbsp olive oil
salt and pepper

Chimichurri Ingredients
1 cup chopped fresh parsley
2/3 cup fresh coriander (cilantro)
1 cup olive oil
2 tbsp lemon juice
2 tsp red wine vinegar
3 cloves garlic
1 tsp dried chilli flakes
salt and pepper

Method
Combine marinade ingredients and process. Place beef in marinade and refrigerate for 24 hours, making sure all the surface of the beef is in contact with some marinade from time to time.

Make chimichurri by combining all ingredients and lightly processing.

When time, remove steak from marinade and shake off excess. Cook to your liking (I prefer this recipe rare or medium rare). After resting steak, slice and drizzle a generous quantity of chimichurri over the pieces.

I am late to the party, LOL. I know this is a very old recipe thread, but I thought I would revive it as I am going to make some chimichurri soon. I have an abundance of parsley and I need to find a way to use it. Perfect!
 
Wow, that video is a blast from the past.
Yeah, I know it's old. I suggested doing some nice ribeye steaks with chimichurri and got a negative response from my husband. I just created a new thread about chimichurri so if you have any tips or ideas for other meats, please visit the thread and share, thanks!
