500 grams mango bits, I sometimes use a slurry of blitzed mango.
500 grams of jam sugar which has pectin in it.
A glug of cider vinegar
Chili powder to taste. This is my base method, add whatever fresh or dried spices you want. Finely grated fresh turmeric is boss, wear gloves.

How long does it cook for and can you use any breadmaker?
The Jam setting on mine takes 80 minutes, only if it has a setting. I do not have the luxury of an outdoor pantry to store 40 or fifty jam jars full or empty like I had in N/Wales. Now I vacuum seal 500 gram bags of local ripe fruit when it is abundant and cheap. Imagine a bag of beautiful sun ripened apricots turn into jam on a bleak January evening and eaten for breakfast with a home made fiselle and sweet butter.
