Broccoli Stems

My favorite part of broccoli is the stems. Peel the skin and you have a tender, fleshed piece of broccoli. Anyone else favor or like this part?

They are wonderful and they also look very attractive of sliced across into 'rounds'. Not sure if I've photographed anything using them but it is something I definitely use. I don't necessarily peel the skin. It depends on how woody. They are good at room temperature in salad.

Definitely. Tossing the stems is such a waste.

I find the skin too tough. I'm sure there are folks out there that don't know you can peel the skin quite easily.

Maybe we get different broccoli here in the UK. I think you are right though that people don't know. A speed peeler does the job fast.

I find a pairing knife works best as once you catch an end of the peel, the whole section of peel comes off.

Yeah, I peel the stems, too. Add a little cheese sauce, and YUM.

I'm sure I read that the bulk of the beneficial nutrients are in the stems.

Love 'em. I freeze them when I cook broccoli then make a creamy broccoli & pea soup with them. Delish
