Broccoli Stems

My favorite part of broccoli is the stems. Peel the skin and you have a tender, fleshed piece of broccoli. Anyone else favor or like this part?

They are wonderful and they also look very attractive of sliced across into 'rounds'. Not sure if I've photographed anything using them but it is something I definitely use. I don't necessarily peel the skin. It depends on how woody. They are good at room temperature in salad.

I find a pairing knife works best as once you catch an end of the peel, the whole section of peel comes off.
