1 1/2c brussel sprouts
1/2c onion
16oz white beans
16oz firm tofu
150g celery
250g tomato
1tbsp light brown sugar
2tbsp chili mix
350g zucchini
1tsp salt
2tsp canola oil
1tbsp margarine (vegan)
1tbsp garlic
250g potato
Directions
- Start with browning the onions in the oil and earth balance
- Cut the brusel sprouts and break apart, add to onions.add carrots and celery. allow to brown.
- Add the white beans, zuccinni and tpmatoes.
- Add water, brown sugar and chili mix, and some creol seasoning once the zucchini starts to soften.
- Once the sugar is dissolved, add the tofu, by breaking it into pieces streight into the chili.
- Allow to cook for 30-45 minutes. salt to liking, and add pepper or califonia red pepper.
