Ingredients

Potatoes
Butter
Milk
Salt and black pepper
Cabbage
Onion
Carrot
Olive oil

Method

Boil the potatoes in salted water, drain and mash with a little milk and butter. Season.

Slice the cabbage, chop the onion and shred the carrot. Boil or steam together for about 10 minutes. Drain and mix with the mashed potatoes. Season.

Cover and refrigerate overnight.

Add the potato mixture and a little olive oil to a frying pan sized to give a thickness of about 20 mm. Fry until one side is brown then turn over and similarly brown the other side.

Serve hot.
