To use up left over Brussel Sprouts or cabbage and potatoes — roasted, boiled or mashed. Other vegetables can also be mixed in but it needs to be about 50% potato. Mashed potatoes make the best Bubble and Squeak. I think the name comes from the noise that it makes when you fry it.

This is how my mum used to make it, which wasn't often because there usually wasn't any left overs.

Mix the sprouts and mash together thoroughly and form into patties with your hands. Flatten slightly and fry in batches in the fat, or oil of your choice but fat from the roast meat makes the most of yesterday's dinner, until brown and crisp on the outside and thoroughly heated through in the middle.
Enjoy on its own or as a side dish.
