BUTTER BEAN CANAPÉS
Makes about 3 dozen

INGREDIENTS
1 can (15.5 ounces) butter beans, (large white beans), drained
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
3 tablespoons chopped onion
2 tablespoons chopped fresh parsley or chives
1 teaspoon chopped garlic
3 tablespoons extra-virgin olive oil
1/2 teaspoon each salt and freshly ground black pepper
baguette, large enough for about 12 1/3rd-inch-thick slices

DIRECTIONS
In a bowl, mix all ingredients well (except the baguette slices).

Mound the bean mixture on the bread slices and serve.

NOTE: If made up to 3 hours ahead, the bread will, for the better, soak
up the juices from the beans.



This is simple, and delicious, makes a great appetizer, side, or even a no-fuss weeknight meal.
 
I love butter beans - I'd probably call this a bean salad rather than canapés (which I always think of as small bites), But whatever its called it sounds delicious.
