Recipe Butter Rice with Lime and Fresh Turmeric

An easy way to jazz up rice. You can use lemon in place of lime but I think lime looks prettier, to contrast with the yellow.

Ingredients (serves 2)
100g basmati rice
220 ml water
1/2 tsp turmeric powder
A pinch of salt
Fresh turmeric root
Zest of 1 lime
40 g butter in small pieces

Method
  1. Cook the rice with the addition of turmeric and salt, according to your usual method. When cooked stir through the zest of half the lime and half the butter.
  2. Place in a serving dish and top with the remaining zest and butter. Grate fresh turmeric root over the top.
