Can you identify what the ingredients are?

They are a type of nut with a similar consistency as sweet potato. The skin/shell is similar in texture to the skin of a black cardamom pod. The unofficial Thai name in "carabao" which translates as "buffalo" but the accepted official name is "krajup" - กระจับ (Tsinghara Nut) which is actually also Thai for a boxer's jockstrap. It is also known as "water caltrop".

Yes its anatto also known as achiote. Its not Japanese. Its Mexican. I made the gorgeous yellow coloured oil you can see here with it:

Achiote/anatto seeds are often used in place of saffron to make yellow rice, especially commercial versions of it, which come in packages or boxed. We use a popular brand when making "Chicken and Yellow Rice".
