Carolina Barbecue Sauce
"Carolina-style barbecue is traditionally on the sour side. If you want a sweeter sauce, add 1/2 cup brown sugar and a pinch of ground mace."
1/2 cup red-wine vinegar
2 TB. peanut oil
1/4 cup Dijon mustard
2 TB. Worcestershire sauce
1 TB sweet Paprika
1/4 tsp. Tabasco sauce
Combine all of the ingredients in a nonreactive saucepan and bring to a boil. Lower the heat and simmer for 10 minutes.
Makes about 1 cup
