This is a dish that my Mother made often when I was growing up. It's cheap & family friendly.
I hadn't had this in many, many, MANY years and I can't really say what made it come to mind, but this is delicious!
It's a simple recipe and is highly customizable.
I used bulk Pork Breakfast Sausage, but you use what you like.
I had Colby Jack Cheese, but I could see an inexpensive block of Swiss Cheese being grated up at home might be nice too.

Cheesy Sausage & Rice Casserole

Serves 4-6

Ingredients:

1 lb. bulk Sausage
1 rib Celery, diced (about ½ C.)
1 small Onion, chopped (approximately ½ C.)
½ C. Bell Pepper, diced (any color you prefer)
1 clove Garlic, minced
4 Tbsp. Butter
1 C. Chicken Broth
10.5 oz. can Cream of Celery Soup
3 C. cooked Rice
1 tsp. dried Parsley (or 1 tablespoon fresh, minced)
Pinch of Red Pepper Flakes (optional, but I used it)
1 ½ C. shredded Cheddar Cheese
S&P to taste

Method:

Preheat the oven to 350°F/177°C.
Generously butter or spray a 9×13-inch casserole dish or baking pan. (Or what I did was use 4 mini aluminum loaf pans, 5 ¾ X 3 ¼ inches)
In a large skillet over medium high heat, cook the Sausage breaking it apart, until crumbly and browned. Drain and discard any excess fat and set the Sausage aside in a large mixing bowl.
In the same pan, melt the Butter and cook the Celery, Onion, Bell Pepper until tender.
Add in the Garlic, Parsley and Red Pepper Flakes (if using) and sauté until fragrant.
Transfer the Vegetable mixture to the mixing bowl.
Add in the cooked Rice and shredded Cheese as well to the mixing bowl.
In a large measuring cup, whisk together the Broth and Soup.
Stir in the broth-soup mixture with everything else in the mixing bowl, making sure everything is well combined.
Taste for seasoning and add Salt and/or ground Black Pepper.
Turn the mixture into the prepared pan/s.

Cover tightly with foil.
Bake for 30 minutes.
Remove the pan/s from the oven and let it stand for 10 minutes without removing the foil.
Uncover and fluff the rice-sausage mixture with a fork before serving.
Top with more Cheese and/or sliced Green Onions on top if desired.

Looks good! I think my mom made something similar when I was growing up using chicken. Nostalgia, eh?
