Perhaps this is a pasta salad. I'm not sure. It is a one pot meal fusing Oriental stir fry and Italian ingredients. Obviously, you can use another meat if you like and whichever veggies you prefer or have on hand. I made it to highlight some Florida avocados I received. It is up to you. Below is what I used and how I made it using what I had on hand.
Ingredients
1/2 package of spaghetti
5 chicken tenders quartered
1/2 cup leaves pulled from the base of a napa cabbage
1 onion
1/2 red bell pepper
1/2 cup of snow peas
1 avocado (I used 1/2 of a large one)
Vinaigrette to taste
Instructions
Start heating water in a pot for the spaghetti. Start cooking the pasta. Oil and heat a wok. Stir fry the chicken for a couple of minutes to brown it. Add the remaining ingredients except for the avocado. Stir fry until everyhing until it is cooked to your preference. Plate the spaghetti, top it with the veggies, top everything with the avocado and sauce with the vinaigrette. Feeds 3 or 4. Bon Apetit.
