Ingredients

400 g Chicken breast, trimmed and diced 30 mm
3 ripe tomatoes, skinned and diced
1 large onion, chopped
1 tsp garlic, minced
1⁄2 tsp ginger, minced
1⁄2 tblsp fresh basil, chopped
2 tblsp olive oil
salt and freshly ground black pepper, to taste
1 capsicum, chopped into 20 mm pieces
8 shallots, quartered
6 fresh tomatoes, quartered
Flour tortilla wraps
BBQ sauce (optional)


Method

Add the diced tomatoes, onion, garlic, ginger, basil, half the olive oil and seasoning to a blender and blend until smooth.
Pour the marinade over the diced chicken in a bowl and mix thoroughly ensuring that the chicken is well coated.
Cover and refrigerate for at least 4 hours or overnight.
Soak about 10 or 12 wooden skewers in water for about 15 minutes then thread on the chicken, capsicum, shallots, and tomatoes.
Brush the kebabs with olive oil and grill for around 8 minutes each side. Serve with flour tortilla wraps and BBQ sauce.
