I initially planned on making Turkey Tetrazzini this afternoon, but when I discovered the "turkey" in our freezer was actually a pack of stir fry chicken, and that I was out of cream of mushroom soup, I changed things up a bit.
I decided to make a provolone cheese sauce, basically similar to the recipe below, but I added some garlic powder for extra flavor.

Then sauteed some green bell pepper, fresh mushroom, and the chicken. I added this to some rotini pasta, along with the sauce and topped it with more cheese. Baked covered for about 30 min, then uncovered it and broiled it for a min or two for some color. I was thinking some red onion would have worked in here too and added some extra color, so I may try that next time, but other than that - this one was a keeper!
