Recipe Chimichurri Negro

[The Late Night Gourmet]

This is what happens when chimichurri meets a mole negro. I made the chimichurri with mint and cilantro, so adding the mole to the blend adds an interesting spicy chocolate mint character.

Ingredients

1 bunch mint
1 bunch cilantro
2 garlic cloves, grated
1/2 cup mole negro
1/4 cup olive oil
1/4 cup white vinegar

Directions

1. Combine all ingredients in a food processor. Pulse until it achieves desired consistency.
