Chocolate Dessert Crepe Batter ("Crepe Cookery" by Mable Huffman)
3 eggs
1 C flour
2 Tbl granulated sugar
2 Tbl powdered cocoa
1 1/4 C buttermilk (or 1 Tbl lemon juice added to 1 1/4 C milk)
2 Tbl melted butter

Beat eggs. Mix together dry ingredients. Alternate adding dry ingredients & buttermilk to the beaten eggs. When well mixed, add in butter.

These crepes have a great chocolate flavor! They are NOT good for freezing as the texture is not pliable after freezing, so I'm contemplating replacing all of the sugar with chocolate syrup (such as is used on ice cream).

The restaurant in Cinderella's Castle in Walt Disney World used to serve chocolate crepes filled with a mint whipped cream filling, with some of the filling piped in a big rosette across the 2 crepes, with an unwrapped Andy's Candy mint stick in it, with chocolate syrup drizzled on them and the plate.
 
I'd make them without the sugar. I very rarely use sugar at all except in cake. As @Shermie said, they are really chocolate pancakes, and I always freeze pancakes flat and either refresh them in a pan or just leave on the side to thaw out.
