Coconut flour - best baking recipes!

Hi all! I am new to this forum, but I figured, I needed some help with a recent purchase I made...
Well, coconut flour! It is very delicious, but I have no luck with it in my baking!
I tried to make some cookies, but all of them turned out too soft, no crunch to them. I am substituting the 'normal' gluten flour with coconut one.
Do you have tips for me, how to succeed in this endeavor? I really want to enjoy a guilt-free coconut snack from time to time!

Well maybe you can add some rice flour in there, that may help with the texture. I was going to suggest a little wheat flour but since you mentioned gluten-free, I won't mention wheat.
 
I didnt know coconut flour existed, but why dont you try half coconut flour and half plain flour
 
I do not know that there is something like that "coconut flour". It's interesting and maybe I have to do some research with recipes using that kind of flour.
