Has anybody tried cooking with PB2? I use it as a lower calorie solution to peanut butter (I'm obsessed!) and I recently came up with a few ways to incorporate PB2 into a few actual recipes! Have any of you tried PB2 in place of peanuts or peanut butter in any recipes?
My (new and improved) favorite peanut sauce:
1c PB2
1/2c water
1/2c chopped unsalted peanuts
1/2in finely grated fresh ginger
1/4c soy sauce
2tsp rice vinegar
2tsp brown sugar
1/4tsp red pepper flakes
Blend all of the ingredients together, then toss over medium heat for a few minutes to warm up, or serve cold!
I use this with chicken, in wraps, with pasta, pork, anything!
