Hello all, and Happy New Year!

I'm an inexperienced, but ambitious, cook, with a Nightshade obsession. My current main dishes/works in progress are (looking for perfection):
- Street Salad w/ Cortes Rosado/Tequila -- ?Meat?, Onion, Beansprouts, Red Cheddar, Chilies and Lime (fresh Coriander?), and Green Celery (Tequila version)
- Diavola ?Calabrese? w/ Sangria -- Tomatosauce, Pepperoni, sweet Pomodoro, Jalapeño, Provolone, Cujillo Olives and fresh Basil, Oregano
- Apothecary's Pot w/ Red Wine -- diced Bacon and Pork, Cocktailsausages, Mushrooms, Onion, Broth, Cream, Red Bell and Paprika

Never heard of any of your dishes, although "Diavola" sounds spicy, and "Calabrese" is South Italian. Wouldn´t recognise a street salad if someone gifted me one, but I´d love to hear about it!
As for the tequila - love it. Love Mezcal even more!
