I've got some Maseca brand corn flour to use up, so I'm making tortillas with cayenne peppers mixed in. The flour has to be of a nixtamalized variety.

Method
Mix your flour and salt with the optional diced chili. Slowly, in increments, add your warm water, mixing well between each addition. You might need a bit more or a bit less, depending on your flour.

The dough is right when you can roll it around in the bowl and it picks up the remainders.
Cover for an hour, at least, for the water to distribute evenly.
I don't have a press so I cut the sides open on a freezer bag, gallon size, and oiled that and then used a glass baking dish to press them out. They're kind of thick but I'm okay with that.
Cooks notes: Smoke alarms might go off so have your shot of calming fluid handy...
