These look delicious, I would have never though to baste the fish with a mayo based mixture:

That sounds genius and it probably adds a ton of flavor as well as keeps the fish moist without it draining off all over the pan. The only problem is the price of crab meat. I wonder if the canned variety would work OK here. I definitely wouldn't use the imitation crab for something like this.
 
I have made something similar to this but with a salmon pate as a stuffing. I think I made a light sauce to cover it with (It was a while back) I use thin slices of lemon usually cooked on top of sole to keep it moist.
