These can be served as a side dish or as part of a dish like our tostados, burritos, tacos, tortas, etc.

Sofrito

1/2 cup fine chopped onion
1-2 cloves mined garlic
1/2 cup chopped/diced tomatoes
1/4 cup fine chopped green bell pepper
2 Tbsp olive oil

Combine all above in large sauce pan over medim-high heat, cook until onions are tramslucient and green bells are soft. Add garlic and cook for 1 minutes. Add tomatoes and cook until soft.

Beans

one 26.5 can black beans
1 tsp ground cumin or to taste
2 large bay leaves
1 cup chicken stock
salt and pepper

Add beams to sofrito. Add cumin and bay leaves, and 1 cup chicken stock. bring to a simmer, cover and cook for 20 minutes uncovered until thick. taste and adjust seasoning as needed.

Refried Beans

Black beans as above
1/4 cup lard

Remove bay leaf from beans and mash about half of the beans. In a medium skillet over high heat. Add 1/4 cup lard and heat until shimmering, add black beans and cook until lard is absorbed.

TOSTADOS

Corn tortillas
Refried beans
Fresh chorizo, cooked and broken up
Sliced/chopped lettuce
Chipotle salsa
Chopped fresh tomato
Chopped avocado
queso fresco
chopped fresh cilantro

Fry the corn tortillas until crisp. Slather a thick layer of refried beans on the tortilla. Sprinkle some chorizo on top, the lettuce, tomato, avocado, queso fresco, chipotle salsa, cilantro and top with queso fresco. Serve.

I read the title and thought, “Since when did they legalize in Florida?” 🚬

Having read it, I like the focus on ingredients that are perfect without having to add anything (except salt). All of these are humble ingredients that are already perfect by themselves (except maybe a chorizo that’s assertive, like the kind I make). The freshness really comes through in the pics. Nicely done.
