Recipe & Video Daikon Salad

Two light yet filling salad made with daikon. Daikon (aka giant white radish) salad served with rice and soup or daikon salad mixed with tuna or chicken are complete low-calorie meals that take very little time to make.


500 grams julienned daikon
200 grams julienned carrot
100 grams thinly sliced onion

(dressing one 1:1:1 ratio)
1 tablespoon dark soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame seed oil (optional)

(dressing two 2:1:1 ratio)
2 tablespoons mayonnaise
1 tablespoon mustard
1 tablespoon rice vinegar
1 can of tuna/chicken or 100 grams broiled/boiled fish/chicken

1. Soak the julienned daikon, carrot, and onion at least 30 minutes in water to remove any bitterness. (If you would like to add sweetness, dissolve up to 1/4 cup sugar in the water and let rest in the fridge over night.)
2. Combine the ingredients for the dressing.
3. Toss the vegetables with the dressing and serve.
4. Konbu salt and/or sesame seeds are great ways to top the salad.
