For those who are liking Campari you should consider a Negroni. A classic cocktail from the 1920's - one part gin, one part campari, one part sweet vermouth (red) over ice and slice of orange to serve.
Alternatively a broken Negroni (Negroni Sbagliato) replacing the gin with prosecco. Originated at Bar Basso in the early 70’s the story goes that the barman was making a Negroni when he accidently grabbed a bottle or Prosecco instead of gin. Adding the Prosecco, he accidently made the first Negroni Sbagliato.
Some cocktail bars keep their vermouth in wooden barrels to further enhance the flavour.
