My grandmother used to make an incredible cake with two layers of hazelnut meringue baked in cake tins. They came out crisp and crunchy on the surface and chewy on the inside, with a wonderful nutty flavor. She would put a layer of whipped cream and fruit like strawberries, raspberries or blueberries between the meringue rounds, plus extra cream and berries on the top.
Does anyone know how to make a hazelnut meringue like this? I would love to recreate my favorite cake from long ago. Thanks!
