Egg Substitute?

When baking a majority of us use eggs. When you're a vegan (or in a my case a vegetarian who cannot eat eggs) what do you use as a substitute? I live in Canada and we have this packet called "egg substitute", made basically with cornstarch and baking powder, this is what I primarily use. I know that other people use applesauce but what do you use? I'm curious to see if I can switch up my ingredients and try different substitutes to see how my baking comes out.
 
It depends on the recipe I am making. When baking, (victoria sandwich, black bean brownies, scones) I simply ignore the egg completely and use a touch extra soya milk (I'm vegetarian, but can't have any dairy). All of these will still rise and bind without the need for eggs. In fact there is very little difference in my chocolate chip scones with or without eggs - the only obvious difference being the fact that the without verison don't go as brown because I have not egged them across the top beofre cooking them.
