Can someone please tell me what esters are? I see them listed as an ingredient in certain soup products, usually as 'citric acid esters of (glycerides)'?
Now that you have a chemical description of esters I can tell you that they are used for making artificial fruit flavors. Nothing nutritious about them. This what we are talking about when we talk about processed foods.

they could produce any flavor or smell your little ole' marketing department desired.
Sure, but there are naturally formed esters as well.
I brew small batches of beer and esp the Belgian yeast form esters. Their formation depends on the fermentation temperature and they make a big difference in the taste.
