Recipe Fluffy Banana Cake

Ingredients:

· 300 g butter
· 200 g icing sugar
· 6 egg yolks
· 5 egg whites
· 250 g wheat flour
· 2 ripe bananas, mashed
· ¼ teaspoon vanilla powder
¼ tablespoon baking powder

Method:

1. Beat together butter and icing sugar until combined. Then add the egg yolks and mix it well.
2. Put the wheat flour, vanilla powder and baking soda into the mixture, mix it well.
3. Add mashed banana, stir the batter again.
4. Beat the egg whites until it become fluffy and light. Then put the banana batter while you stir it evenly.
5. Pour the batter into a baking pan which already greased with butter.
6. Then put the baking pan into the oven and bake it at 180c for 40 minutes.
7. After that, remove the cake from oven and finally banana cake is ready to be served.

I make this a lot but sometimes I would mix with some all purpose white flour. I am interested in the fluffy part of things. What makes it so fluffy?
 
I've always wanted to make a fluffy banana cake.
Not one that is heavy & dense, but vanilla power? Never heard of that before. :headshake:
