Food trends for 2016?

Much in the vein of the great posts from @SatNavSaysStraightOn about foods that have gone out of fashion, I'm wondering if you have any predictions about foods that might be up and coming for 2016. It could be particular ingredients or even finished, cooked items or dishes.

I read an article which thought that in 2016 we'll be seeing cauliflower over kale, a surge in doughnut popularity (totally okay with that!) and also dumplings as a hot trend.

Anything you think will be buzzing in 2016?
 
I reckon it will be The return of Sea Eggs! The following dish of Mac 'n Cheese topped with Guacamole and Sea Urchins was spotted at 'on trend' restaurant Pettycash in Los Angeles:

I think any ingredient that is local would be a good consideration when it comes to thinking about what will be a hit or a trend this coming year. I would like to believe that chilies are still in as well as the fermented sauces.

I thought the local food thing had already happened. Good restaurants (and not so good!) make a point of saying 'locally sourced ingredients' and supermarkets are stocking locally sourced too. Not enough, I grant you, and no doubt the locally sourced supermarket food travels miles to a distribution centre and miles back out to the region it came from. In France too, loads of restaurants now have Menu du Terroir (local menu).
 
Local and organic is not cheap and I agree it already happened, this is the reason why I want to grow my own. People are now very much aware of the good benefits of sourcing local and they want to partake in it. Most people are now aware of how to live a sustainable life by limiting their impact on their environment.
 
Farmers markets have been a big thing near me for about ten years,the changing face of them is they are getting more specialised ,more unique foods more fine ingredients as the TV shows move the farmers will also
 
Donuts are definitely more popular than ever. I believe that spherification is going to make a huge appearance in the food industry as well. As for California, it seems like Gastro pubs and Asian Fusion are making a huge hit right now and are only getting bigger as they make their way into restaurants. I've noticed a lot of restaurants incorporating meat boards and pork belly as well.
 
I believe that the food trends are going to go more towards a healthier trend. Light and easy dishes, with low preparation time and quicker cooking processes but very healthy and nourishing meals for the whole family.
 
Not too sure about the 'local' foods thing. Really how much of the things we buy can be local ? Example eggs - only if there is a producer nearby. Fruit - not here unless it's autumn [fall] really and obviously no tropical fruits [please no premium hot-house grown stuff]. Sugar - no Tea - no Coffee - no. Bread - not many so called local bakeries with the sheer capacity to supply hundreds of loaves every day [and exactly where does all that flour come from ?]. Milk and cheese are similar and of course nothing tinned or frozen. Drinks are out - even water seems to be 'better' from miles away [really ?] It's a question of scale, it may 'feel good' to buy local but in reality it's mostly a dream. In the real world the only way to make such things possible is a massive population cull + a return to wartime rationing or a medieval diet
