Recipe Gingersnap Chicken

2-3 chicken breasts

Mix :
1 egg, beaten
1/8 tsp molasses

In a separate bowl, combine:
breadcrumbs
1/8 tsp cinnamon
1/8 tsp cloves
1/8 tsp ginger
salt & pepper to taste

Melt 1 Tbl butter in pan.

Coat chicken in the wash then the breadcrumb mixture.
Fry in butter until golden brown.

I love this idea @BittersweetSamba. Can I ask what your molasses is like? In the UK we have black treacle which I think is the nearest thing but it is very black and strong tasting. I also use pomegranate molasses but that is rather different - much more of a fruity taste.

According to the internet (such an authority, I know!) black treacle is very similar to US molasses. :wink:

I think I'm still going to try making a gingersnap sauce and using just plain breading on the chicken. The spices in the breadcrumbs imparted a very subtle flavor - I think I'm looking for a bigger BANG!
